Not Quite Maxwells' Spinach Balls

I'm calling these Spinach Nubs because I am just so tired of looking at the word BALLS.

I posted a recipe request on Facebook this morning, but nobody could help me out. When I got home from work I asked Google for a recipe.

There are evidently several variations on the Spinach Ball, and in the end I disregarded them all. So much BUTTER, Gawd, and doesn't anybody ever use fresh spinach? My Personal Food Processor (Husband) chopped
a bag of fresh spinach
half an onion
3 nice cloves of garlic
which I cooked a bit in my trusty cast iron skillet. I didn't want the spinach to get too soggy so I basically just wilted it. Also while this was cooking I toasted 4 slices of Day Old Pumpkin Bread from The New Day Bakery and pulverized them in the food processor (by this time Husband had gotten bored and wandered off to check on his WOW auctions).
Once the spinach cooled down a bit, I added:
1/3 cup Shake Cheese
a handfull of Finely Shredded Italian Cheese Blend
4 slices worth of breadcrumbs
a generous shake of ground mustard
salt & pepper
a smidgeon of madras curry powder
paprika

Then I beat the crap out of two large eggs (and I do mean LARGE, these eggs were freakish. I expect if you had normal size eggs you might want to use 3) and stirred them in too. The Nub Shaping might have gone down with a cookie dough scoop if I had one, but I don't (anybody want to throw a Pampered Chef party?) so I used my hands. It was sticky and gross but not quite as bad as meatballs.
These Spinach Nubs baked at about 350 (my oven is wildly inaccurate, it might have been more like 400) till they were done, about 20 minutes altogether. I have no idea what Maxwells puts in the awesome dipping sauce they serve, but I mixed together:
a big glob of sweet & spicy mustard
a tablespoon of honey
1/3 cup plain yogurt
a smidgeon of butter
several shakes of Tabasco
and warmed it in the RadarRange. Husband said that while it didn't really taste like Maxwells' sauce, it was still pretty darn good.

There are a few left, since Delia refused to eat any. Looks like they will freeze well, but I don't expect them to last that long. The next time someone invites me to a party, I will most definitely bring these yummers.
