Jamacan Latkes

Brunch today was supposed to be sweet potato hash, but someone got distracted by yarn and the sweet potatoes boiled to the mushy stage. Oops! Keith had the idea to turn them into latkes, and the rest is history!

1 large sweet potato, or a can of sweet potatoes (not in syrup)

1/2 cup black beans

Squeeze of lime juice

Mash these together in a medium bowl.

1 onion, 1 green pepper, 1 Anaheim pepper (or other peppers of your choice) all finely chopped

A heaping tablespoon of Jerk Seasoning - I made my own a while ago and can't exactly remember what all is in it, besides allspice, cinnamon and thyme. But that's what the Internet is for, you know, Google it.

In an iron skillet warm about 2 tablespoons of oil and add the spices. Don't get it too hot! This is just to activate the aromas. Add the peppers and onions, and sauté till they start to get soft, about 6 minutes.

Stir the pepper, onion and spice mixture into the potatoes and beans. Then stir in a fistful of flour and a couple of eggs. It will look like thick, lumpy pancake batter.

Heat your iron skillet back up to medium hot and cover the bottom in oil. Drop big spoonfuls of batter into the hot oil and fry till browned! Drain on paper towels, and enjoy with hot sauce!
